Green & Blue Sauce
  • Ingredients
  • 1/2 pound fresh broccoli
  • 6 ounces Gorgonzola cheese
  • 1/2 cup mascarpone
  • 1 cup plain yogurt
  • freshly ground black pepper to taste
Directions
  1. Wash and trim broccoli, discarding stalks
  2. Cut in small florettes
  3. Cook in boiling salted water 2 to 3 minutes or until crisp-tender
  4. Drain thoroughly
  5. Roughly chop cheese
  6. Put cheese and mascarpone in a small saucepan
  7. Stir over low heat until cheese has melted
  8. Add broccoli and yogurt to cheese sauce
  9. Heat gently, stirring occasionally, 2 minutes
  10. Pour over hot pasta
  11. Serves 4.
