Ricotta, Leek & Ham Sauce
  • Ingredients
  • 2 tablespoons butter
  • 2 leeks, thinly sliced
  • 1 garlic clove, crushed
  • 1 ounce thin ham slices
  • 2 cups ricotta cheese
  • 2/3 cup dairy sour cream
  • milk
  • freshly ground black pepper to taste
Directions
  1. In a medium-size saucepan over medium heat, melt butter; add leeks and garlic
  2. Cook until leeks are soft
  3. Cut ham into small squares
  4. Stir into leeks
  5. Cook a few minutes more. In a medium-size bowl, mix together ricotta and sour cream
  6. Add a little milk, if necessary, to make a smooth creamy sauce
  7. Season with pepper
  8. Add to pan with leeks and ham
  9. Reduce heat to low and cook until sauce is heated through
  10. Serve at once over hot pasta
  11. Serves 4.
