Sausage and Peppers Sauce
  • Ingredients
  • 1/2 pound Italian-style sausage
  • 3 tablespoons olive oil
  • 2 green bell peppers, seeded, cut into 1/2-inch strips
  • 1 small onion, cut into 1/2-inch chunks
  • 1 garlic clove, crushed
  • 1 (28 ounce) can Italian plum tomatoes, drained and chopped
  • 1/4 teaspoon oregano
  • salt and freshly ground black pepper to taste
Directions
  1. Cut the sausage into 1/2-inch crosswise slices
  2. Saute in a medium skillet over low heat, stirring, until browned, about 10 minutes
  3. Lift from pan with a slotted spoon; discard any sausage drippings and wipe out the pan
  4. Heat the oil in the skillet; saute the peppers and onion over medium heat, stirring until edges begin to brown and vegetables are crisp-tender, about 5 minutes
  5. Then add the garlic and saute for 1 minute
  6. Return the sausage to the skillet and add tomatoes, oregano, salt and pepper
  7. Cook, stirring, uncovered, for 5 minutes to concentrate the tomato juices
  8. Add the seasonings and simmer for 5 more minutes
  9. Toss with hot pasta
  10. Serves 4.
