Sicilian Olive Sauce
  • Ingredients
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 1 (28 ounce) can plum tomatoes, drained
  • 1/2 teaspoon dried oregano
  • 3 tablespoons of fresh parsley
  • 1 (6 ounce) jar red roasted peppers,
  • drained and coarsely chopped
  • 1 (6 ounce) jar marinated artichoke hearts
  • 1 (6 ounce) can pitted ripe olives, drained
  • 2 cooked boneless and skinless
  • chicken breasts, chunked
  • salt and freshly ground black pepper to taste
Directions
  1. Saute garlic in olive oil
  2. Chop tomatoes and add to pan with garlic along with remaining ingredients. Bring to a boil and simmer uncovered for about 20 minutes
  3. Toss with hot pasta
  4. Serves 4.
