Salmon and Lemon sauce
  • Ingredients
  • 1/4 cup olive oil
  • 1/2 cup vertically sliced onion
  • 2 garlic cloves, crushed
  • 1 teaspoon finely shredded lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons coarsely chopped Italian flat-leaf parsley
  • 1 (7-3/4 ounce) can red salmon, drained
  • freshly grated Parmesan cheese
Directions
  1. Heat oil in a skillet over low heat; stir in onion slices
  2. Saute, stirring, until tender but not browned, about 10 minutes
  3. Add garlic
  4. Saute 2 minutes
  5. Stir in lemon zest, juice, and parsley
  6. Add salmon; carefully break up with a fork
  7. Do not stir. Reheat sauce over high heat; do not stir
  8. Toss lin- guini and sauce together
  9. Serve at once sprinkled with Parmesan
  10. Serves 4.
