Tri-Color Sauce
  • Ingredients
  • 1/2 cup butter
  • 1/2 cup fresh or frozen peas
  • 1 large sweet yellow pepper, julienned
  • 1-1/2 cups medium or light cream
  • 1 pound fresh plum tomatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
Directions
  1. Melt 1/4 cup of the butter in a large skillet
  2. Add the peas and sweet peppers and saute for about 3 minutes
  3. Add the cream and bring to a slow boil
  4. Cook until the sauce is reduced by about one-quar- ter
  5. Add the tomatoes and cook for 10 minutes
  6. Place hot pasta in a heated serving bowl
  7. Add the remaining 1/4 cup butter and Parmesan cheese
  8. Toss to mix
  9. Pour the hot sauce over and toss again
  10. Serve immediately
  11. Serves 4 to 6.
