Potatoes, Broccoli, and red Pepper
  • Ingredients
  • 6 tablespoons olive oil
  • 1 small red bell pepper, seeded, cut into thin strips
  • 1/2 teaspoon crushed dried red pepper
  • 1 small garlic clove, cut into thin slivers
  • 3 cups cubed (1/2-inch) unpared new potatoes
  • 3 cups broccoli florets,
  • cut into approximately 1/2-inch pieces
  • freshly grated Parmesan cheese
Directions
  1. Heat oil in a medium skillet
  2. Add bell pepper and saute 3 minutes, or until crisp-tender
  3. Add the crushed red pepper and garlic and saute 1 minute more
  4. Cook potatoes and broccoli in a medium saucepan in about 1 inch of lightly salted water
  5. Steam until they are tender, about 8 minutes
  6. Drain and toss with the peppers and plenty of freshly grated Parmesan cheese
  7. Toss with hot pasta
  8. Pass with more Parmesan
  9. Serves 4.
