Chicken Artichoke Sauce
  • Ingredients
  • 3 tablespoons olive oil
  • 1 pound chicken breast, skin removed
  • and cut into strips
  • 1/2 cup chopped shallots
  • 2 tablespoons flour
  • 1-1/2 cups chicken broth
  • 1 cup dry white wine
  • 2 tablespoons capers, drained
  • 1 tablespoon lemon juice
  • freshly ground black pepper to taste
  • 1 (14-ounce) can artichoke hearts,
  • drained and cut into quarters
  • 1/4 pound snowpeas, cut into thin slivers
Directions
  1. In a medium-size skillet, heat the oil over medium- high heat
  2. Add the chicken and saute until the chicken is lightly brown
  3. Reduce the heat to medi- um-low and add the shallots
  4. Saute for 2 minutes. Sprinkle the flour over the chicken and shallots, stirring constantly until the flour is well blended. Add the chicken broth and wine
  5. Cook, stirring, until the sauce has thickened
  6. Add the capers, lemon juice, pepper, artichokes, and snowpeas and cook for about 3 minutes
