Salmon with Asparagus & Lemon Butter
  • Ingredients
  • 2 salmon steaks, each about 8 ounces
  • 1 teaspoon soy sauce
  • 1/2 pound asparagus, trimmed, stems peeled, cut
  • into diagonals about 2 inches long
  • 6 tablespoons butter
  • 1 clove garlic
  • 1/2 teaspoon grated fresh ginger
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon grated lemon zest
Directions
  1. Brush the salmon steak lightly on both sides with the soy
  2. Grill or broil until almost cooked through, about 3 minutes a side for a steak 1/2-inch thick
  3. Cool slightly; remove and discard outside skin and center bone
  4. Pull salmon into large flakes. Steam the asparagus, covered, on a steaming rack set over 1 inch of simmering water until crisp-ten- der, about 4 minutes
  5. Transfer to a plate; cover to keep warm
  6. Melt the butter in a saucepan and add the garlic and ginger; saute 30 seconds
  7. Add the lemon juice and zest
  8. Toss the hot pasta, asparagus, and melted butter until pasta is coated
  9. Add the salmon and gently toss
  10. Serves 4.
