Arugula and Garlic Sauce
  • Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 red onion, cut into thin lengthwise slices
  • 2 garlic cloves, minced
  • 1 bunch arugula, rinsed and trimmed,
  • about 1 cup packed
  • salt and freshly ground black pepper to taste
Directions
  1. Heat oil and butter in a medium skillet over low heat; stir in red onion; saute until crisp-tender, about 3 minutes
  2. Stir in garlic; saute 1 minute
  3. Add the arugula; saute, stirring, about 2 minutes
  4. Season with salt and pepper
  5. Toss hot pasta with the sauce
  6. Serves 4.
