Easy Primavera sauce
  • Ingredients
  • 2 tablespoons butter
  • 1 (16 ounce) bag frozen Italian-style vegetables
  • (contains zucchini, cauliflower, lima beans, carrots, and green beans)
  • 1 egg
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 basket cherry tomatoes, rinsed
  • 1 tablespoon chopped Italian flat-leaf parsley
Directions
  1. Melt butter in a wide skillet then stir in vegetables
  2. Cook, stirring, over low heat until tender, about 5 minutes
  3. Beat egg, cream, and Parmesan cheese in a serving bowl
  4. Add hot pasta to the bowl with the cream mixture; toss to coat
  5. Add the vegetables, cherry tomatoes, and parsley; toss and serve
  6. Serves 2 to 4.
