Zucchinni, Mushroom, and Fresh Tomato Sauce
Ingredients
2 tablespoons olive oil
1 cup diced trimmed mushrooms
1/3 cup chopped scallions, some tops included
2 cups finely diced trimmed zucchini
4 (1/4-inch-thick) slices of Canadian bacon, cut into thin strips
1 garlic clove, crushed
1 cup chopped fresh tomatoes
1 cup dry red wine
1 tablespoon mushroom powder
1/4 cup chopped Italian flat-leaf parsley
2 tablespoons chopped fresh basil
salt and freshly grated black pepper
freshly grated Parmesan cheese
Directions
Heat oil in a wide saucepan
Add mushrooms and saute 4 minutes
Stir in scallions, zucchini, Canadian bacon and garlic and saute over medium high heat, stirring, until tender, about 8 minutes
Add tomatoes, wine and mushroom powder; cook, stirring, 5 minutes
Add parsley, basil, salt and pepper
Toss with hot pasta
Pass with freshly grat- ed Parmesan cheese, if desired
Serves 4 to 6.
