Zucchinni, Mushroom, and Fresh Tomato Sauce
  • Ingredients
  • 2 tablespoons olive oil
  • 1 cup diced trimmed mushrooms
  • 1/3 cup chopped scallions, some tops included
  • 2 cups finely diced trimmed zucchini
  • 4 (1/4-inch-thick) slices of Canadian bacon, cut into thin strips
  • 1 garlic clove, crushed
  • 1 cup chopped fresh tomatoes
  • 1 cup dry red wine
  • 1 tablespoon mushroom powder
  • 1/4 cup chopped Italian flat-leaf parsley
  • 2 tablespoons chopped fresh basil
  • salt and freshly grated black pepper
  • freshly grated Parmesan cheese
Directions
  1. Heat oil in a wide saucepan
  2. Add mushrooms and saute 4 minutes
  3. Stir in scallions, zucchini, Canadian bacon and garlic and saute over medium high heat, stirring, until tender, about 8 minutes
  4. Add tomatoes, wine and mushroom powder; cook, stirring, 5 minutes
  5. Add parsley, basil, salt and pepper
  6. Toss with hot pasta
  7. Pass with freshly grat- ed Parmesan cheese, if desired
  8. Serves 4 to 6.
