Tomato, Sardine, and Green Bean Sauce
  • Ingredients
  • 1/4 cup olive oil
  • 1/2 cup chopped onion
  • 1 cup trimmed and cut-up green beans (1/2 inch)
  • 1 clove garlic, crushed
  • 1 cup chopped fresh tomatoes
  • 1 teaspoon grated orange zest
  • 1 (3-3/4 ounce) can sardines in olive oil, drained
  • 2 tablespoons chopped Italian flat-leaf parsley
  • 2 tablespoons chopped fresh basil
  • salt and freshly ground black pepper to taste
Directions
  1. Heat oil in a large skillet
  2. Add onion and saute 5 minutes
  3. Stir in green beans and saute over low heat until crisp-tender, about 5 minutes
  4. Stir in garlic; saute 1 minute
  5. Add tomatoes and orange zest
  6. Simmer 10 minutes, or until sauce is slightly thickened
  7. Add sardines, parsley, and basil; stir gently
  8. Add salt and pepper to taste
  9. Toss with hot pasta
  10. Serves 4.
