Tomato, Sardine, and Green Bean Sauce
Tomato, Sardine, and Green Bean Sauce
Ingredients
1/4 cup olive oil
1/2 cup chopped onion
1 cup trimmed and cut-up green beans (1/2 inch)
1 clove garlic, crushed
1 cup chopped fresh tomatoes
1 teaspoon grated orange zest
1 (3-3/4 ounce) can sardines in olive oil, drained
2 tablespoons chopped Italian flat-leaf parsley
2 tablespoons chopped fresh basil
salt and freshly ground black pepper to taste
Directions
Heat oil in a large skillet
Add onion and saute 5 minutes
Stir in green beans and saute over low heat until crisp-tender, about 5 minutes
Stir in garlic; saute 1 minute
Add tomatoes and orange zest
Simmer 10 minutes, or until sauce is slightly thickened
Add sardines, parsley, and basil; stir gently
Add salt and pepper to taste
Toss with hot pasta
Serves 4.
