Marinated Mushroom Sauce
Marinated Mushroom Sauce
Ingredients
/2 pound small white mushrooms, coarsely chopped
1/4 cup finely chopped red onion
1/4 cup finely chopped red bell pepper
1/4 cup chopped Italian flat-leaf parsley
1 tablespoon fresh oregano leaves
OR 1/2 teaspoon dried
1 teaspoon fresh thyme leaves
OR 1/4 teaspoon dried
1/3 cup olive oil
2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
Directions
Combine the mushrooms, onion, red pepper, pars- ley, oregano, and thyme in a small bowl
Whisk the oil, lemon juice, salt, and pepper in a separate bowl; fold together
Cover and marinate, refriger- ated, 1 to 2 hours
Toss sauce with hot pasta and serve at once
Serves 4.
