Marinated Mushroom Sauce
  • Ingredients
  • /2 pound small white mushrooms, coarsely chopped
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup chopped Italian flat-leaf parsley
  • 1 tablespoon fresh oregano leaves
  • OR 1/2 teaspoon dried
  • 1 teaspoon fresh thyme leaves
  • OR 1/4 teaspoon dried
  • 1/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • salt and freshly ground black pepper to taste
Directions
  1. Combine the mushrooms, onion, red pepper, pars- ley, oregano, and thyme in a small bowl
  2. Whisk the oil, lemon juice, salt, and pepper in a separate bowl; fold together
  3. Cover and marinate, refriger- ated, 1 to 2 hours
  4. Toss sauce with hot pasta and serve at once
  5. Serves 4.
