Zucchini, carrot and Parmesan Sauce
  • Ingredients
  • 1/3 cup olive oil
  • 2 garlic cloves, crushed
  • 1-1/2 cups shredded carrot
  • 1-1/2 cups shredded trimmed zucchini
  • freshly grated Parmesan cheese
Directions
  1. Heat the oil over low heat in a medium skillet
  2. Stir in the carrot, zucchini, and garlic
  3. Saute, stirring, for 3 minutes
  4. Toss hot pasta with the sauce
  5. Pass with freshly grated Parmesan cheese
  6. Serves 4.
