Tricolor Tomato Sauce with Mint
  • Ingredients
  • 1 cup chopped ripe red tomatoes
  • 1 cup chopped yellow tomatoes
  • 1/4 cup minced green tomato
  • 1/4 cup olive oil
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped fresh mint
  • 1 garlic clove, crushed
  • 1/8 teaspoon coarsely ground black pepper
Directions
  1. Stir all the ingredients together in a bowl
  2. Toss hot pasta with the sauce and serve at once
  3. Serves 4.
