Roasted Red Pepper and Ricotta Sauce
  • Ingredients
  • 1 (15 ounce) container whole milk ricotta cheese
  • 1 (7 ounce) jar roasted red peppers, rinsed and well drained
  • 1/4 cup olive oil
  • 1 tablespoon grated Parmesan cheese
  • 1 garlic clove, crushed
  • 2 tablespoons chopped Italian flat-leaf parsley
  • 1 teaspoon fresh oregano leaves
  • OR 1/4 teaspoon dried oregano
Directions
  1. Puree ricotta, roasted red peppers, oil, Parmesan cheese, and garlic in the bowl of a food processor
  2. Stir in parsley and oregano
  3. Toss sauce with hot pasta and serve at once
  4. Serves 4.
