Ingredients
Selection: Select fresh coconuts that seem to be
heavy with milk. Refrigerate coconuts until ready
to dehydrate.
Preparation: Pierce eye of the coconut with an ice
pick to drain the milk. Strain milk to drink. Use a
hammer to crack the middle of the coconut. Steam
the shell for 30 to 60 seconds to loosen the coconut
meat. Trim the dark outer skin and grate or slice
coconut into chunks for drying.
Pretreatment: None
Drying time: Dehydrator: 8 to 10 hours; sun: 1 to 2
days.
Refreshing: Use dry, or soak in water until tender
before using in a recipe.
Storage time: 2 to 4 weeks at 70 degrees F.
