Ingredients
Selection: Select fresh firm cranberries.
Cranberries do not dry as well as other fruits. The
large bright red variety or the sweet dark variety
dry the best. Cranberries are great when dried as
part of a fruit leather recipe.
Preparation: Wash well. Refrigerate until ready to
process.
Pretreatment: Blanch in boiling water to crack the
skins.
Drying time: Dehydrator: 12 to 24 hours; sun: 1 to
2 days.
Dryness test: No sign of moisture; sticky.
Storage time: 4 to 6 months at 70 degrees F
