BLUEBERRY BREAD
BLUEBERRY BREAD
Ingredients
1 cup dried blueberries
4 TB butter
2/3 cup sugar
1 egg
1 1/3 cups all purpose flour
2/3 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
3/4 cup chopped nuts
Directions
Cover dried blueberries with warm water and let stand about 30 minutes to refresh
Drain. In a mixing bowl, cream butter and sugar until light and fluffy
Beat in egg
Sift together flour, baking powder, and salt
Add flour mixture to creamed mixture alternately with milk, mixing well after each addition
(Batter will be thick)
Fold in blueberries and chopped nuts. Pour batter into a greased 9x5 inch bread pan
Bake at 350 degrees F
for about 1 hour and 10 min- utes, until pick inserted in center comes out clean
Cool bread in pan
Yield: 1 loaf.
