ORANGE DATE LOAF
  • Ingredients
  • 1/4 cup butter or margarine
  • 1/3 cup brown sugar, firmly packed
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp. each baking powder and baking soda
  • 3/4 tsp. salt
  • 1 TB grated orange peel
  • 1 cup strained fresh orange juice
  • 1 cup chopped dates (8 oz.)
  • 1/2 cup coarsely chopped pecans
Directions
  1. Preheat oven to 350 degrees F
  2. In a medium bowl, cream butter or margarine with brown sugar and granulated sugar
  3. Add egg and beat well
  4. Coat fruit and nuts with 1/4 cup flour
  5. Set aside
  6. In a medium bowl, sift together remaining flour, baking powder, baking soda and salt
  7. In a small bowl, mix orange peel, dates and pecans with reserved 1/4 cup flour. Alternately add sifted flour mixture and orange juice to egg mixture
  8. Beat until blended
  9. Stir in fruit-nut mixture
  10. Pour into greased and floured 9 x 5 loaf pan
  11. Bake in preheated oven in loaf pan 40 to 50 minutes or in square pan 25 to 30 min- utes
  12. Cool 5 minutes in pan
  13. Remove from pan and cool completely on a cooling rack
  14. Makes 1 large or 2 small loaves.
