BRAN MUFFINS
  • Ingredients
  • 1 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup bran flakes
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 to 3/4 cup dried, diced apples, apricots, bananas,
  • cherries, dates, prunes, pineapple or raisins
  • 1/3 cup chopped nuts, if desired
  • 1 egg, beaten
  • 1 1/4 cups buttermilk
  • 1/2 cup honey
  • 1/4 cup butter or margarine melted
Directions
  1. Preheat oven to 350 degrees F
  2. Grease 12 to 14 muf- fin pan cups; set aside
  3. Place whole-wheat flour, all-purpose flour, and bran flakes in large bowl
  4. Add baking soda and salt
  5. Stir
  6. Add dried fruit and nuts to flour mixture
  7. Mix well to coat
  8. In a medium bowl, mix egg, buttermilk, honey and melted butter or margarine
  9. Pour all at once into flour and fruit mixture
  10. Stir only until moistened
  11. Fill muffin pan cups 3/4 full
  12. Bake in preheated oven 20 to 25 minutes
  13. Makes 12 to 14 muffins.
