GERMAN PUFFCAKES
  • Ingredients
  • Boiling water
  • 1/2 to 3/4 cup chopped dried apples, apricots, cherries,
  • dates, figs, pears, raisins or dried currants
  • 6 TB butter
  • 6 eggs
  • 1 cup milk
  • 1/4 tsp. salt
  • 1 tsp. sugar
  • 1/2 tsp. vanilla extract
  • 1 cup flour
  • Lemon juice and powdered sugar or berry jam or jelly,
  • if desired
Directions
  1. Pour boiling water over dried fruit to cover
  2. Let stand to soften 5 to 15 minutes; drain
  3. Preheat oven to 400 degrees F
  4. In preheating oven, melt butter in a 13 x 9 baking pan, checking frequently to avoid scorching
  5. In blender, combine eggs, milk, sugar and vanilla
  6. Blend lightly to mix
  7. Add flour
  8. Mix well in blender
  9. With a wooden spoon or rub- ber spatula, stir in chopped dried fruit
  10. Pour into baking pan containing melted butter. Bake 20 to 25 minutes until puffy and golden brown
  11. If desired, sprinkle with lemon juice and powdered sugar or serve with berry jam or jelly.
