Dried fruit such as apricots, peaches, pears, and
prunes can be immersed in white wine to give the
wine a delicious light fruity taste
The wine
becomes a smooth cordial that gets smoother the
longer the fruit is immersed
Inexpensive wine can
be used to make fruit cordials because the dried
fruit mellows any harshness in the liquor.
Fruit cordials are delicious to sip, and also make a
great dessert topping
After marinating in wine,
the dried fruits make wonderful tasty treats.
Place dried fruit in a ceramic, glass, or stainless
steel container with air tight cover
Pour wine,
brandy, and sugar into container and stir to blend
well
Cover and let stand at room temperature for
1 week
Stir occasionally for several days until sugar
is completely dissolved.
The cordial will reach peak flavor in 3 or 4 weeks
After 5 to 6 weeks, fruit may become too soft, and
can be removed
