Thai Cilantro Chili Marinade
  • Ingredients
  • 1 bunch cilantro
  • 6 cloves garlic, peeled
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon freshly ground white pepper.
Directions
  1. Cut the top off the bunch of cilantro which will include all the leaves and some stems
  2. Place in a food processor
  3. Add the garlic cloves and pulse to finely mince
  4. Add the remaining ingredients and puree. Yield: 1/2 cup SUGGESTED USE: Fish sauce is a Southeast Asian ingredient available at any Asian market and some supermarkets
  5. It is a very salty liquid made from anchovies, salt and water
  6. Used in marinades like this one it provides a light salty taste
  7. Try this marinade on bone-in chicken pieces (4 to 6 hours), boneless chicken breasts (1 hour) or shrimp (1 hour).
