APPLE COFFEE CAKE
  • Ingredients
  • 2 cups dried apples
  • 1 tsp. lemon juice
  • 1/2 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1/2 cup milk
  • 1 tsp. vanilla
  • Topping:
  • 1/2 cup sugar
  • 2 tsp. cinnamon
Directions
  1. Place apples and lemon juice in a bowl
  2. Add enough water to cover and soak 1 hour
  3. Cream margarine and sugar
  4. Add eggs and beat well. Sift together flour, salt, and baking powder
  5. Add to creamed mixture
  6. Add milk and vanilla
  7. Beat well
  8. Pour into two 9-inch greased and floured cake pans
  9. Top with drained, rehydrated apple slices
  10. Combine sugar and cinnamon
  11. Sprinkle evenly over apples
  12. Bake at 375 degrees F
  13. for 35 to 40 minutes.
