GOLDEN FRUIT BALLS
  • Ingredients
  • 1/2 cup each dried apricots, apples, peaches
  • 1/2 cup finely grated unsweetened coconut
  • 1/4 cup blanched almonds
  • 1 tsp. grated lemon peel
  • 1/2 tsp. cinnamon
  • 3 TB honey
  • 3 TB orange juice
  • 1 TB lemon juice powdered sugar, if desired
Directions
  1. Grind apricots, apples and peaches in meat grinder or blender until pieces are the size of rock salt or finer (about 1/8 inch in diameter)
  2. Place in medi- um bowl
  3. Stir in coconut, almonds, lemon peel and cinnamon
  4. In a small saucepan, slightly warm honey, orange juice and lemon juice
  5. Stir to mix well
  6. Slowly pour honey mixture over fruit mix- ture, stirring until mixture sticks together evenly
  7. Form into small balls about 3/4 inch in diameter
  8. Place on baking sheets
  9. Dry at 120 degrees F
  10. until no longer sticky to touch, up to 6 hours on a dry day
  11. If desired, roll balls in powdered sugar
  12. Makes 48 golden crunchy balls.
