VENISON MINCEMEAT
  • Ingredients
  • 5 cups lean ground venison
  • 1 cup ground beef suet
  • 10 cups tart apples peeled and chopped
  • 4 cups seedless raisins
  • 2 cups dried apricots
  • 1 cup currants
  • 1 cup chopped citron
  • 1 tsp. each of cloves, cinnamon, allspice
  • 1 tsp. salt
  • 3 cups brown sugar
  • 2 cups honey
  • 1 quart sweet cider
Directions
  1. Mix ingredients in a large kettle and simmer for at least one hour
  2. Stir constantly and add more sweet cider if the mincemeat becomes dry while cooking.
