SWEET PEAR MINCEMEAT
  • Ingredients
  • 12 medium sized pears, peeled
  • 1 orange unpeeled
  • 1 lemon unpeeled
  • 2 cups dried peaches
  • 2 cups raisins
  • 2 cups sugar or corn syrup
  • 1/2 tsp. each of nutmeg, mace, cinnamon
  • 1/4 cup crystallized ginger, chopped
  • 1/4 cup Grand Marnier
  • 4 drops Angostura Bitters
Directions
  1. Cut up orange and lemon to remove seeds
  2. Use the coarse blades of a food processor to grind pears, orange, and lemon together
  3. Add raisins, sugar, spices, and ginger to the fruit
  4. Mix in a kettle and bring to a boil
  5. Stir constantly as it comes to a boil. Reduce heat and cook for about 30 minutes
  6. Remove from heat when the mincemeat has thick- ened and appears glossy
  7. Stir in the Grand Marnier and the drops of angostura bitters.
