TOMATO MINCEMEAT
  • Ingredients
  • 4 cups unripe tomatoes
  • 1 orange unpeeled
  • 1/2 cup tart apples peeled
  • 1/4 cup chopped beef suet
  • 1/2 cup dried apricots
  • 1/2 cup maple sugar
  • 1/4 cup apple cider
  • 1/2 tsp. cinnamon
  • 1/4 tsp. each of nutmeg and ginger
  • 1 tsp. salt
Directions
  1. Chop tomatoes with course blade, sprinkle with salt and let stand for one hour
  2. Add 8 cups boiling water to tomatoes and let stand for 5 minutes
  3. Drain water from tomatoes
  4. Cut orange into quar- ter slices to remove seeds
  5. Chop orange and add it along with the rest of the ingredients to the toma- toes
  6. Simmer for about an hour, while stirring, until mincemeat is thickened.
