Mix all the
fruits in a bowl with amaretto liqueur and let mari-
nate over night.
Cook beef tongue until tender
Trim outer layer
and discard
Chop tongue in food processor using
medium blade
Mix tongue with dried fruits, cur-
rants, brown sugar, sweet cider, and pineapple
juice
Simmer, while stirring, until thickened and
fruits are tender.
Before removing from heat, stir in candied pineap-
ple, orange and lemon peels, and mace
Remove
from heat and mix in the marmalade and
almonds
After finished mixing, pour the liqueur
over the mincemeat.
