BEEF VEGETABLE SOUP
  • Ingredients
  • 1 meaty soup bone
  • 1 cup ass't dried vegetables (corn, peas, beans)
  • 1 large stalk celery, diced
  • 2 carrots, diced
  • 1 medium onion, diced
  • 1 TB dried parsley
  • 1 TB salt
  • 1/4 tsp. pepper
Directions
  1. Place soup bone in large saucepan and add water to cover
  2. Bring to boil
  3. Reduce heat and simmer 1 hour. Pour boiling water over dried vegetables just to cover
  4. Soak 1 hour. Add diced vegetables, dried parsley, and season- ings, to the beef bone
  5. Add the dried vegetables in their water to above mixture
  6. Simmer 1 to 1 1/2 hours. Remove bone, dice meat, and return to pot
  7. Season to taste and serve hot.
