CREAMED CORN
  • Ingredients
  • 1 1/2 cups dried corn kernels
  • 3 cups boiling water
  • 3/4 cup half-and-half (light cream)
  • 1 tsp. sugar
  • 1/4 cup butter or margarine
  • salt and ground black pepper
Directions
  1. Refresh dried corn in a medium saucepan by cover- ing with boiling water
  2. Let stand 2 hours. Add half-and-half, sugar, butter, salt and pepper to taste
  3. Cover and simmer for 1 hour or until corn is soft
  4. Watch carefully so that corn does not boil dry and burn
  5. Yield: 4 to 6 servings.
