PEKING JERKY
  • Ingredients
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1 TB Vegetable oil
  • 2 TB Vinegar
  • 1 tsp. sugar
  • 1/4 tsp ground ginger
  • 1 clove minced garlic
  • Cajon seasoning or hot pepper powder to taste
  • 1 lb round, flank steak, or other lean cut meat
Directions
  1. Mix marinade ingredients together in a bowl
  2. Dip meat slices into marinade
  3. Place dipped meat in layers in a bowl or dish
  4. Pour remaining marinade sauce over meat
  5. Cover tightly and let marinate in refrigerator for 6 to 12 hours
  6. Rotate layers of meat occasionally. Place in dehydrator until dry
  7. While meat is drying, blot excess oil with paper towel.
