JERRY'S JERKY SPECIAL
  • Ingredients
  • Makes about 1/2 lb jerky
  • 1/2 cup teriyaki sauce
  • 2 TB parsley flakes
  • 1/2 TB cracked pepper
  • 1/2 tsp. celery salt
  • 1/2 bay leaf, crushed
  • 2 TB dry sherry
  • 2 lbs sea bass, sword fish, cod, or salmon, boned and
  • skinned
Directions
  1. Pretreat and cure fish according to earlier direct- ions. Mix marinade ingredients together in a bowl
  2. Dip fish slices into marinade
  3. Place dipped fish slices in layers in a bowl or dish
  4. Pour remaining marinade sauce over fish
  5. Cover tightly and let marinate in refrigerator for 6 to 12 hours
  6. Rotate layers of fish occasionally. Place in dehydrator until dry
  7. While fish is drying, blot excess oil with paper towel.
