SEAFOOD PIE
  • Ingredients
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/4 cups milk
  • 2/3 cup unflavored yogurt
  • 2/3 cup white wine or chicken stock
  • 3/4 lb cooked white fish, flaked
  • 1/4 lb cooked shelled shrimp
  • 1/4 lb cooked white crab meat
  • 1/4 lb cooked scallops, diced
  • 2 TB chopped scallions
  • 1/4 tsp. curry powder (optional)
  • salt to taste
  • freshly ground black pepper to taste
  • 3/4 lb frozen puff pastry
  • 1 egg, beaten
Directions
  1. Melt butter in a pan and stir in flour
  2. Cook for a couple of minutes without letting it brown
  3. Stir in milk, yogurt, and wine
  4. Simmer on low heat for 2 minutes
  5. Add fish, shrimp, crab, scallops, scallions, and seasonings
  6. Pour into pie pan and let cool. Thaw, roll pastry and cut out a narrow strip to line the pie pan edge
  7. Moisten the pan lip with water and lay the strip along the edge
  8. Use egg to damp- en the pastry strip and cover it and the pie with pastry
  9. Mound the edge and make a slit in middle of pie for releasing heat pressure.
