YOGURT FISH CAKES
  • Ingredients
  • 2 cups cooked fish
  • 1 green pepper, minced
  • 1 onion, minced
  • 2 TB butter
  • 1 TB minced parsley
  • 1 1/2 cups yogurt
  • 3 1/2 cups hot mashed potatoes
  • 1 egg, beaten chopped chives
Directions
  1. Saute pepper and onion in butter for 2 minutes
  2. Remove from heat and add fish, parsley and yogurt
  3. Mix egg with mashed potatoes and pour half of potato mixture into baking dish
  4. Spread all of fish mixture over potatoes
  5. Top with remaining potatoes and garnish with chopped chives
  6. Bake 15 to 20 minutes in 350 degree oven
  7. Serves 6.
