SEA SCALLOPS
  • Ingredients
  • 1 1/2 lbs. scallops
  • 1 1/2 cups dry sherry
  • salt and pepper
  • 2 TB canola oil
  • 1 TB butter
  • 1 TB flour
  • 1 cup yogurt
  • 1/2 cup milk
  • 1/2 cup chopped mushrooms
  • 2 TB grated Swiss cheese
  • 2 TB bread crumbs
  • fresh dill or parsley for garnish
Directions
  1. Mix scallops, sherry, salt and pepper in large pan
  2. Cover, and slowly bring to boil over low heat
  3. Simmer for 5 minutes
  4. Drain liquid and set aside
  5. Chop scallops and set aside
  6. Pour mixture into buttered casserole dish, sprinkle on bread crumbs
  7. Heat in broiler until golden brown
  8. Garnish with dill or parsley
  9. Serves 4 to 6.
