Place peanut butter, coconut milk, lemon juice, soy sauce,
brown sugar, ginger, garlic and cayenne in a saucepan
Cook, stirring constantly, over medium heat, until the
sauce is thick and fairly smooth, about 10 minutes
Pour
sauce into the blender and puree, adding the chicken broth
to thin as necessary.
Yield: 1-1/2 cups
SUGGESTED USE: Peanut sauce is typically used as a
dipping sauce for pork, beef, or chicken satay - thin strips of
meat woven on bamboo skewers
