Thai Red Curry Sauce
  • Ingredients
  • 1 tablespoon vegetable oil
  • 2 tablespoons prepared Thai red curry paste
  • 1 (14-ounce) can unsweetened coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 2 tablespoons minced fresh cilantro leaves
Directions
  1. Heat oil in a medium saucepan
  2. Add curry paste and stir and mash into the oil over medium low heat
  3. Add the coconut milk and bring to a simmer
  4. Stir in the fish sauce, sugar and salt
  5. Taste for seasoning and stir in the cilantro just before serving. Yield: 1-1/2 cups SUGGESTED USE: Pour this hot sauce over cooked chicken, pork or shrimp
  6. It is also very good over grilled fish fillets.
