SPICY MANGO SALSA
  • Ingredients
  • 1 large or 2 small ripe mangos
  • 1/4 red onion
  • 1/2 Scotch bonnet or habanero chili
  • 3 sprigs cilantro
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground cumin
  • Salt and white pepper to taste
Directions
  1. Peel and cut mango away from the pit
  2. Cut mango into large dice and place in a medium bowl
  3. Dice the red onion and add to the mango. Wearing gloves, remove seeds and membrane from chili and finely mince
  4. Remove leaves from cilantro and mince leaves
  5. Toss chili and cilantro with mangos
  6. Add lime juice, cumin, salt and white pepper to taste
  7. Let stand at room temperature 1 hour or refrigerate up to 2 hours before serving.
