BLACK BEAN AND MANGO SALSA
  • Ingredients
  • 2 large or 3 small ripe mangos
  • 1/2 red onion
  • 1 small bunch cilantro
  • 2 serrano chilies
  • 2 cloves garlic
  • 2 (15-ounce) cans black beans, rinsed and
  • drained
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
Directions
  1. Peel and cut mango away from the pits
  2. Cut mangos into large dice and place in a large bowl
  3. Dice red onion to make 3/4 cup
  4. Remove cilantro leaves from stems and mince
  5. Add onion and cilantro to mango. Cut stems off serrano chili and slice across into thin slices
  6. Peel garlic and mince and add to mangos along with chili
  7. Toss in black beans, lime juice, olive oil and sugar
  8. Let stand at least 30 minutes or refrigerate up to 3 hours before serving.
