RED BELL PEPPER AND FRESH PEACH SALSA
  • Ingredients
  • 1 large red bell pepper
  • 3 large fresh peaches
  • 1 small bunch fresh basil
  • 1/2 small bunch fresh mint
  • 1/3 cup olive oil
  • 3 cloves garlic
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • Pinch sugar (optional)
Directions
  1. Cut top and bottom off red bell pepper and slice down one side to open
  2. Remove seeds and membranes and lay flat
  3. Peel peaches and cut in half
  4. Remove the pit from each. Finely mince the basil to make 1/4 cup and finely mince the mint to make 2 tablespoons
  5. Toss with olive oil. Brush the red pepper and peaches with the herb oil and grill until browned and softened a bit
  6. Cut red pepper into fine dice and peaches into large dice and place in a medium bowl
  7. Add the remaining herb oil. Peel the garlic and finely mince
  8. Add garlic to peaches along with lime juice and salt and pepper to taste
  9. If mixture is not sweet enough add some sugar to taste. Cover and refrigerate up to 2 hours before serving.
