BLACK BEAN RELISH
  • Ingredients
  • 2 plum tomatoes
  • 1/2 red bell pepper
  • 1/4 red onion
  • 1 serrano chili
  • 1 (15-ounce) can black beans,
  • rinsed and drained
  • 2 tablespoons white wine vinegar
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste,
Directions
  1. Cut tomatoes lengthwise in quarters
  2. Remove seeds
  3. Cut tomatoes into medium dice and place in a medium bowl. Cut red bell pepper and red onion into medium dice and add to tomatoes
  4. Remove stem from chili and thinly slice into rings
  5. Add to tomatoes. Toss black beans with tomato mixture and then gently toss in the vinegar, vegetable oil and salt and pepper to taste
  6. Let stand 30 minutes at room temperature or refrigerate for up to 3 hours.
