MANGO AND DRIED CRANBERRY CHUTNEY
  • Ingredients
  • 1 Granny Smith apple
  • 1 small onion
  • 4 slices crystallized ginger
  • 1 (16-ounce) bag frozen mango cubes, thawed
  • 3/4 cup dried cranberries
  • 3/4 cup sugar
  • 1/2 cup cider vinegar
  • 3/4 teaspoon yellow mustard seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
Directions
  1. Peel and core apple and cut into large dice
  2. Peel and chop the onion and place in a large saucepan with the apple
  3. Mince the crystallized ginger and add to the apple along with the thawed mango cubes and all the remaining ingredients
  4. Bring to a boil and then lower the heat and cook, stirring occasionally, until the fruit is tender and mixture has a jam-like consistency
  5. Cool to room temperature and then refrigerate up to 1-1/2 weeks.
