PEACH CHUTNEY
  • Ingredients
  • 1-1/2 pounds ripe fresh peaches
  • 1/2 red bell pepper
  • 1/2 medium onion
  • 1 large jalapeno chili
  • 4 cloves garlic
  • 1-inch piece fresh ginger
  • 1/2 cup golden brown sugar
  • 1/2 cup white sugar
  • 1/2 cup cider vinegar
  • 1/3 cup golden raisins
  • 1/2 teaspoon salt
Directions
  1. Peel peaches, remove pits and cut into large dice
  2. Place in a large saucepan
  3. Remove seeds and membrane from red bell pepper and cut into medium dice
  4. Chop the onion and add to peaches along with red pepper
  5. Remove stem end from chili
  6. Cut in half lengthwise and remove all seeds and membrane
  7. Finely mince the chili and add to the peaches. Peel and mince the garlic and ginger and add to the peaches
  8. Stir in all the remaining ingredients and bring to a boil
  9. Lower heat and simmer, stirring occasionally, until fruit and vegetables are tender and sauce reaches a jam-like consistency
  10. Cool to room temperature and refrigerate up to 1 week.
