TOMATO CILANTRO CHUTNEY
  • Ingredients
  • 1 bunch cilantro
  • 1 small shallot
  • 2 cloves garlic
  • 1/2-inch piece fresh ginger
  • 3 tablespoons unsalted butter
  • 5 large plum tomatoes
  • 1/4 cup sugar
  • 4 teaspoons tomato paste
  • 4 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
Directions
  1. Remove leaves from cilantro stems and chop the leaves
  2. Cover and set aside
  3. Peel and mince the shallot, garlic and ginger
  4. Melt the butter in a medium saucepan and add the shallots, garlic and ginger
  5. Saute for 1 to 2 minutes to soften. Peel tomatoes and cut in quarters lengthwise
  6. Scoop out seeds and cut into medium dice
  7. Add to the saucepan along with the cilantro, sugar, tomato paste, lemon juice and salt
  8. Bring to a boil, lower heat and simmer until tomatoes are tender, about 15 minutes
  9. Cool and use within 4 hours.
