JALAPENO KETCHUP
  • Ingredients
  • 3 tomatoes
  • 1/2 onion
  • 2 to 3 jalapeno chilies
  • 2 cloves garlic
  • 1/2 cup red wine vinegar
  • 1/2 cup canned crushed tomatoes or
  • tomato sauce
  • 1/4 cup water
  • 1/4 cup golden brown sugar
  • 1/2 teaspoon chili powder
  • 2 to 3 teaspoons hot pepper sauce
  • Salt and pepper to taste
Directions
  1. Peel tomatoes and cut in half crosswise
  2. Squeeze out the seeds and cut into medium dice and place in a large saucepan
  3. Chop the onion and add to tomatoes
  4. Trim ends from jalapenos and cut in half lengthwise
  5. Scoop out seeds and membrane and finely dice
  6. Add to tomatoes
  7. Peel and mince garlic and add to tomatoes with all the remaining ingredients. Bring to a boil and then lower heat and simmer for 20 to 25 minutes, stirring occasionally
  8. Remove from heat and cool slightly before pureeing in the blender or food processor
  9. Cool completely and then chill until serving time and up to 1 week.
