TARRAGON TARTAR SAUCE
  • Ingredients
  • 3 green onions
  • 1/2 bunch Italian parsley
  • 2 small gherkin pickles
  • 4 sprigs fresh tarragon
  • 1 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon sweet paprika
  • 1/2 teaspoon hot pepper sauce or to taste
  • Salt and pepper to taste
Directions
  1. Trim ends from green onions and finely chop to make 1/2cup
  2. Remove leaves from parsley and finely chop to make 1/4 cup
  3. Cut pickles into small dice to make 1/4 cup
  4. Remove leaves from tarragon stems and finely mince
  5. Place mayonnaise in a medium bowl and stir in all chopped ingredients as well as the lemon juice, paprika and hot sauce to taste
  6. Season to taste with salt and pepper
  7. Cover and refrigerate up to 24 hours.
