SWEET PEPPER AIOLI
  • Ingredients
  • 1 large red bell pepper
  • 2 cloves garlic
  • 1 green onion
  • 1/2 cup mayonnaise
  • 2 tablespoons mango or peach chutney
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon cayenne pepper
  • Salt and pepper to taste
Directions
  1. Cut tops and bottoms off pepper and slit down one side
  2. Open pepper and flatten
  3. Preheat broiler and lay a sheet of aluminum foil on a baking sheet
  4. Lay the pepper on the foil and broil close to the heat source for 8 to 10 minutes or until pepper skins are blackened
  5. Wrap pepper in foil and let stand at least 10 minutes
  6. Unwrap and peel off skins
  7. Cut the pepper into small dice. Peel and mince garlic
  8. Trim ends from green onion and finely chop
  9. Stir diced peppers, garlic and green onion into mayonnaise along with chutney, lemon juice and cayenne
  10. Season to taste with salt and pepper
  11. Cover and refrigerate at least 1 hour and up to 24 hours.
